The BT GStreamer element would simply have to declare what formats are supported by the headset (mp3, sbc, ...) with bitrates, channels ... . GStreamer would perform adhoc convertion on a needed basis. However GStreamer is not meant to replace ALSA, but be used in parallel to it.
