Due to the bluetooth specifications I suspect you'll only be able to connect 7 devices per bluetooth hardware on your system, you would need to use multiple bluetooth 'dongles' on the box to connect 30 headsets.
I've not worked with headset stuff before so perhaps it works a little differently, but in general you can connect 7 remote clients to any bluetooth server.
